Vegan(Ish) for a Day: 3 Delicious Meatless Dishes That You MUST Try
We had a Vegan Cooking Class for Couples scheduled Valentines Day Weekend, but we decided to reschedule it do to the terrible weather that day. Since we have a little more, let me address an issue that kept coming up: ANNOUNCEMENT! YOU DON'T HAVE TO BE VEGAN TO LEARN HOW TO COOK VEGAN MEALS! YOU CAN JUST LEARN HOW TO EAT LESS MEAT AND BE HEALTHIER.
The bottom line is that we eat too much meat! Eating less meat is better for our health and the environment. We CAN eat meals without meat and still be satisfied. We CAN get our protein and calcium from sources outside of animal products. I'll tell you more about that later.

In this short article, we’ll show you 3 delicious recipes for a day with no meat. That’s 1 for breakfast, 1 for lunch, and 1 for dinner.
Let’s get straight to it:
Breakfast: Coffee Chia Breakfast Pudding
For this masterpiece you’ll need the following:
- 4 Tablespoons Chia Seeds
- 175ml Coffee
- 175ml Coconut Oil
- 1 tsp Vanilla
- 2 tsp Erythritol
- ½ tsp Cinnamon
Simply put all the ingredients in a bowl and stir. Once you have a good mix, cover it and put it in the refrigerator overnight.
Lunch: Sweet Potato Quesadillas
You’ll need the following:
- 2 tsp Vegetable Oil
- 1 Small Onion
- 2 Garlic Cloves
- 3 Cups of Grated Sweet Potatoes
- 1 Small Jalapeno Chile
- 2 tsp Ground Cumin
- ½ tsp Dried Oregano
- 1 Cup of Fresh/Frozen Corn Kernels
- 4 8-inch Flour Tortillas
Heat the oil over medium heat and add the onion. After about 8 minutes add the potatoes, oregon, cumin, and jalapeno. Cook this for about 10 minutes and stir often. Put the corn in the last minute.
Spread the filling on each tortilla and fold them. After that, heat the tortillas for about 3 minutes and you’re done.
Dinner: Meatless Chilly Corn Carne
This magnificent dish is perfect for your Vegan dinner. It’s incredibly easy to make and tastes delicious.
For it, you’ll need the following:
- 1 Onion
- 1 Green Bell Pepper
- 1-2 Cloves Garlic
- 3 tsp Olive Oil
- 1 red Chili/Jalapeño
- 5-6 Sun-Dried Tomatoes
- ½ cup Vegetable Broth
- 1 can kidney beans
- ½ can Corn
- 1 can Chopped Tomatoes
- 1 can Lentils
- 1 tsp Tomato Paste
- 1 tsp Cumin
- 1 tsp Paprika Powder
- 1 tsp Oregano
Cut the Onions, Garlic, Bell Pepper, Chili, and Dried Tomatoes into tiny pieces and put all of them into a pan, frying them for about 3 minutes.
After that just add the Broth, Beans, Lentils, Sweetcorn, and Chopped Tomatoes and stir well. Put the Tomato Paste in there and add the condiments you desire. Put it on medium heat and cook it for 20 minutes, stirring from time to time.
And you’re done after that. Just serve it and enjoy your delicious Vegan dinner.
